Dijon Pork Chops

Notes:  This is a Weight Watcher Recipe.  It is my favorite way to have pork chops!!

Servings: 2

Ingredients:

3 tablespoons bread crumbs (can use Ian's Gluten Free Panko Bread Crumbs)
1 heaping tablespoon Parmesan cheese, grated
1 tablespoon parsley, chopped
1/8 teaspoon pepper
10 ounces pork loin chops
2 teaspoons dijon mustard
1 teaspoon vegetable oil

Instructions:

  1. Spread the mustard on the pork chops.
  2. Combine together the bread crumbs, Parmesan cheese, parsley, and pepper.
  3. Dredge the pork chops in the combined ingredients.
  4. Apply the vegetable oil to the broiler pan to avoid sticking.
  5. Broil 5-6 minutes on each side.
