This is a great dish when you are serving a lot of people!
Surprisingly, the leftover are fantastic.
Ingredients:
2 pounds ground beef
1 small can of re-friend beans (can use a larger can to stretch the recipe for more people)
8 ounces tomato sauce (I use a smaller amount of tomato paste when I don't have sauce)
1 package of taco seasoning
1 1/2 cups of shredded cheese (colby jack, cheddar, etc.)
18 - 20 hard taco shells
Compliments:
lettuce, shredded
salsa
sour cream
green pepper, diced
red pepper, diced
avocado, diced
guacamole
lime, squeezed or in wedges
Instructions:
- In a large skillet, brown the ground beef. Drain off any extra fat.
- Add the re-fried beans, tomato sauce, and taco seasoning to the ground beef.
- Mix on medium heat until thoroughly incorporated.
- Spoon the mixture into taco shells.
- Place the filled shells into a 9x13 pyrex dish, standing up.
- Sprinkle the tacos with cheese.
- Bake at 400 for 12 minutes or until heated through and the cheese is bubbling.
- While the tacos are baking, prepare the taco compliments.
