Ingredients:
1 pound lean ground turkey breast, browned
6 cups water
28 ounces tomatoes with liquid, cut up
15 ounces tomato sauce
1 chicken bouillon cube
1 medium onion, chopped
1 tablespoon garlic, minced
2 tablespoons minced dried parsley
1 teaspoons salt (or to taste)
1 1/2 teaspoons thyme
1/2 teaspoon pepper
1 medium zucchini, thinly sliced
1 cup corn
16 ounces garbanzo beans, rinsed and drained
1 cup uncooked elbow or small shell pasta
1/4 cup grated Parmesan cheese
Instructions:
- In crockpot, combine browned meat, water, tomatoes, tomato sauce, bouillon, onion, garlic, parsley, salt, thyme, and pepper. Cover and cook on low for 7-9 hours.
- Add zucchini, corn, beans and pasta. Cook on high, covered, for 30-45 minutes longer, or until vegetable are tender.
- Sprinkle each serving with Parmesan cheese.
