Rhubarb Bread
Yield: 2 loaves
Ingredients:
1 1/2 cups brown sugar
1 whole egg
1 teaspoon salt
2 1/2 cups flour
1 teaspoon baking soda
2/3 cup shortening, or oil
1 cup buttermilk
1 teaspoon vanilla
1 1/2 stalks rhubarb (1 1/2 to 2)
Topping
1/2 cup nuts
1/4 cup sugar
1/4 cup butter
Instructions:
1. Mix all together. Put in greased loaf pans. Bake at 325 for 60 minutes.
2. Mix topping ingredients together & top loaves.
