Notes: Can substitute fresh berries with 8 oz. frozen thawed & drained.
Ingredients:
1/2 cups rolled oats
1/2 cup orange juice, can sustitute with water
1 1/2 cups flour
1/2 cup sugar
2 3/4 teaspoons salt
1/4 teaspoon baking powder
1/2 cup vegetable oil
1 each egg, slightly beaten
1 cup fresh berries or
drained)
Topping
2 tablespoons sugar
1/4 teaspoon cinnamon
Instructions:
1. Combine oats and juice - stir well.
2. Add flour, ½ cup sugar, baking powder, salt, vegetable oil and egg.
3. Stir in berries.
4. Pour batter into cupcake pan and sprinkle 2 T. sugar a cinnamon over batter.
5. Bake 18-22 minutes at 400 degrees.
