Ingredients:
1 1/2 cups boiling water
1 cup oatmeal
1 stick oleo
1 cup brown sugar
1 cup sugar
1 teaspoon vanilla
2 whole egg
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
Topping
3/4 cup brown sugar
1 stick oleo
1 cup coconut
1/2 cup nuts
1 tablespoon cream, or canned milk (may use 1 more tablespoon if needed)
Instructions:
1. In small bowl pour 1.5 cups boiling water over 1 cup oatmeal and cool for 20 minutees.
2. Cream oleo, sugars, and vanilla. Add 2 eggs and beat well. Add to cooled oatmeal mixture.
3. Gradually add flour. salt, baking powder, and baking soda. Beat well.
4. Bake in a greased and floured 9 x 13 pan at 350 degrees for 35 to 40 minutes.
5. Prepare the topping: Boil for one minute: brown sugar, coconut, oleo, and nuts with 1-2 tbsp canned milk or cream. Spread on cooled cake and broil for a short time until mixture bubbles.
