Molasses & Jam Cookies

Notes: The strawberry jam can be substituted with any other berry jam.  Raspberry works well too!  This recipe is from the Cooking Light Magazine.

Ingredients:

2 cups flour
1/3 cup sugar
1 tablespoon cinnamon
1 tablespoon ginger
1 teaspoon baking powder
1/4 teaspoon baking soda
Filling
1/2 cup butter
1/2 cup molasses
2 tablespoons hot water
1/2 cup strawberry jam

Instructions:

1. In a large bowl sift together first six ingredients.

2. Melt butter and add molasses.  Stir until dissolved.

3. Pour hot ingredients and water over the dry ingredients.

4. Kneed into ball and chill 1 hour.

5. Heat oven to 375 degrees.

6. Roll chilled dough until 1/8 inch thick.  Use a cookie cutter to cut out shapes.  Spread jam on center of one cookie and then top with another cookie making certain to squeeze the edges together.

7. Bake 10-12 minutes.
