Marnie's Egg Casserole

Notes: casserole can be made the night before and kept in the fridge covered.  If so, baking time may be increased sightly.  This recipe is from my friend and colleague who makes this for our morning staff meetings!  It's delicious.

Ingredients:

32 oz. cottage cheese
6 each eggs
10 oz. chopped spinach, drained
8 oz. cheese, any kind shredded
6 tablespoons flour
1/4 cup margarine
1 teaspoon salt
1 tablespoon chopped onions

Instructions:
1. Mix the eggs, butter, salt, flour and onions.  Add cheese and spinach

2. Cook in a greased 9 x 13 pan at 350 for 1 hour.
