Date Filled Cookies

Ingredients:

Filling
3/4 cup sugar
3/4 cup pitted dates, chopped
3/4 cup water
3/8 teaspoon vanilla
Dough
3/4 cup butter
1 1/2 cups sifted all purpose flour
1 1/2 cups quick cooking oats
1 cup brown sugar
1 teaspoon soda
2 tablespoons baking powder
4 tablespoons milk, approximate measure

Instructions:

1. Cook together sugar, dates, add water until thick.  Stir constantly to prevent scorching.  Remove from heat.  Allow filling to cool, then add vanilla.

2. Blend butter, flour, oatmeal, brown sugar, soda, and baking powder to resemble a course meal.  Add milk gradually, mixing lightly but thoroughly with a fork until the dough is moist enough to roll.  Gather into a ball, roll out on a well-floured board to 1/8 inch thickness.

3. Cut with a round cookie cutter.  Place a teaspoon of filling on one disc and cover with another disc.  Place cookies on an ungreased baking sheet.

4. Bake at 275 degrees for about 15 minutes.
