Deedee's Salmon Mousse

Notes:  This is one of my favorite appetizers.  My friend Deedee gave me the recipe - we love to make it for special small group gatherings.  We use a fish shaped mold and use an olive for the eye.

Ingredients:

1 can tomato soup, undiluted
8 ounces cream cheese, light
2 pag gelatin, unflavored, knox
1/2 cup water, cold
3/4 cup celery, chopped
3/4 cup purple onion, whole, chopped
1 cup mayonnaise, hellmans light
1 teaspoon worcestershire sauce
1 can salmon, large, pink ok

Instructions:
  1. Heat soup, blend in cream cheese, soften gelatin in cold water, add to warmed soup mix, cool till mix thickens (1 hour).
  2. Add celery, onion, mayo, with sauce, and salmon.  
  3. Pour into lightly oiled fish mold.  Chill 2-3 hours.  
  4. May make a couple days ahead.  Serve with crackers, Garnish with fresh dill, olive for the eyeball. Or garnish with leaf lettuce on the platter.
