Notes: This is one of my favorite appetizers. My friend Deedee gave me the recipe - we love to make it for special small group gatherings. We use a fish shaped mold and use an olive for the eye.
Ingredients:
1 can tomato soup, undiluted
8 ounces cream cheese, light
2 pag gelatin, unflavored, knox
1/2 cup water, cold
3/4 cup celery, chopped
3/4 cup purple onion, whole, chopped
1 cup mayonnaise, hellmans light
1 teaspoon worcestershire sauce
1 can salmon, large, pink ok
Instructions:
- Heat soup, blend in cream cheese, soften gelatin in cold water, add to warmed soup mix, cool till mix thickens (1 hour).
- Add celery, onion, mayo, with sauce, and salmon.
- Pour into lightly oiled fish mold. Chill 2-3 hours.
- May make a couple days ahead. Serve with crackers, Garnish with fresh dill, olive for the eyeball. Or garnish with leaf lettuce on the platter.
