Crepes

Notes:  I love when mom would make these.  She would fill the crepes with chicken and a creamy sauce.  For dessert she would then make the dessert variety.  They are delicious.

Ingredients:
Basic Recipe
2 each eggs
2/3 cup milk
3/4 cup all-purpose flour
1/4 teaspoon salt
1 tablespoon melted butter

For Dessert add these ingredients to the basic recipe

1 tablespoon melted butter, additional
2 tablespoons sugar
1 teaspoon vanilla
2 tablespoons cognac or brandy, optional


Instructions:

1. Combine all basic ingredients in a blender about 30 seconds.  Scrape sides with a spatula and cream for additional 5 seconds.

2. If electric mixer is used, blend the basic ingredients until smooth and creamy consistency.

3. Cover and refrigerate.  When ready to use, sitr and blend, adding milk to thin or flour to thicken to proper consistency.
