Notes: I found this recipe on the back of the Ocean Spray Cranberry package a while back. My neighbor's love when I make them these for a special treat!
Ingredients:
2/3 Cup unsalted butter, cooled and slightly warmed
1 large egg
2 cups all-purpose flour
1 cup dried cranberries
1/2 cup nuts, hazlenut & pecans
1/2 teaspoon baking soda
1 1/2 cups light brown sugar
2 tablespoons honey
1 teaspoon vanilla
1/2 cup old-fashioned rolled oats
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup white chocolate chip
Instructions:
1. Preheat oven to 350.
2. By hand or mixer, blend together butter, brown sugar, and honey.
3. Add egg and vanilla, mix well.
4. In a large bowl, stir together flour, oats, baking soda, salt and cinnamon.
5. Add to butter mixture and mix until combined well.
6. Stir in remaining ingredients.
7. Place dough 2" apart on ungreased baking sheet and bake in the center of the oven until edges are lightly browned and centers are still soft.
8. 12 - 15 minutes.
9. Do not overbake.
10. Cool completely.
