Ingredients:
2.5 pounds of red or yukon gold potatoes
2 yellow onions
3 tablespoons olive oil
2 tablespoons whole grain mustard
Kosher salt, to taste
Ground Pepper, to taste
Parsley, to garnish
Instructions:
- Cut the potatoes into quarters and distribute them evenly on a sheet pan. Do not crowd them so that they roast instead of steam.
- Peel and slice the onions in half moons about 1/4 inch thick.
- Toss the onions into the potatoes.
- Sprinkle the olive oil and mustard on the potato-onion mixture.
- Toss the potato-onion mixture with clean hands until all the potatoes are coated.
- Sprinkle with salt and pepper.
- Bake in a 350 degree oven for 50 - 60 minutes.
- Toss the potatoes every so often to ensure even browning.
- Plate the potatoes and garnish with chopped parsley.
