Baked Oatmeal

Servings: 8

Notes:  I found this recipe on allrecipes.com and have been morphing it continually.  Change up the fruit or the spices and make a great variation.  (cherries, peaches, blueberries, etc.)

Ingredients:
3 cups rolled oats
1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk (I use coconut milk)
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup dried cranberries

Instructions:

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix together, oats, brown sugar, cinnamon, baking powder, and salt.
  3. Beat in milk, eggs, melted butter, and vanilla extract and then mix into the dry ingredients.
  4. Add the dried fruit.  
  5. Spread into a 9x13 baking dish.
  6. Bake in over for 40 minutes.
