Lemon Chicken, Quinoa, & Green Vegetables

Servings 2-4

Ingredients:
1-2 skinless, boneless chicken breasts
Salt & Pepper to taste

1-2 cups quinoa
2-4 cups chicken broth
Juice of a 1/2 lemon

1-2 small bunches of green onions, chopped
1-2 cups frozen peas
Juice of a 1/2 lemon

2-4 ounces of fresh goat cheese

Instructions:

  1. Add salt and pepper to the raw chicken breasts.  Bake or grill the chicken breasts until cooked through.
  2. While the chicken is cooking prepare the quinoa according to the instructions on the box.  I prefer to use chicken broth in place of water.  Stir in the juice of 1/2 of a lemon to the quinoa while it is simmering.
  3. When the chicken is done let it rest for five minutes and then chop it into bite sized pieces.
  4. Pour the completed quinoa into a skillet, add the chopped green onions, peas, and juice of 1/2 of a lemon along with enough chicken broth to allow the flavors to come together.
  5. Once the onions are tender and the peas have heated through, add the chopped chicken and bring the entire dish up to temperature.  Add chicken broth if needed to keep it from burning.
  6. Plate the mixture in a shallow bowl and add dollops of goat cheese to the top and serve.
