Tortellini in Chicken Broth

Servings: 4

Notes:  This is a Weight Watcher's recipe.

Ingredients:

2 cups low-sodium chicken broth
2/3 cup water
2 cups frozen cheese tortellini
1 cup slivered watercress leaves (optional)
2 scallions, sliced
3 drops hot red pepper sauce
2 Tablespoons grated Romano or Parmesan chees
Freshly ground pepper to taste

Instructions:


  1. Combine broth and water in medium saucepan and bring to boil
  2. Add tortellini to liquid and cook as directed 
  3. After tortellini is cooked, add watercress until wilted 
  4. Add hot red pepper sauce 
  5. Serve with cheese and pepper to garnish to taste
