Southwestern Black Bean Salad

Servings: 4 - 6

Notes:  This is a South Beach Recipe

Ingredients:

1 - 16 ounce can black beans, rinsed and drained
1 cup diced red pepper
½ cup cooked corn kernels
1 red onion, finely chopped
½ cup chopped cilantro
4 scallions, thinly sliced
1 jalapeno, seeded/deveined, and chopped
4 teaspoon lime juice
4 teaspoon olive oil
2 garlic cloves finely chopped
salt and pepper to taste

Instructions:


  1. In large bowl, combine all ingredients and toss to combine
  2. Let stand, covered, until flavors blend (30-60) minutes
