Swedish Almond Drops


Servings: 12

Notes: These cookies will keep a long time and will improve in flavor.

Ingredients:
1/2 pound almonds
1 cup sugar
1 teaspoon grated lemon rind
3 each egg whites
2/3 teaspoon cinnamon

Instructions:
1. Wash almonds then dry in moderate oven.  Put through food chopper.

2. Beat egg whites until stiff.  Add sugar and then gradually fold in ground almonds, lemon rind, and cinnamon.

3. Drop by the teaspoonful onto a greased cookie sheet.

4. Bake 15 minutes in a slow oven.

5. When cool, store in a tightly covered jar.
