Notes: This is a Weight Watcher Recipe with four servings and each serving is worth 4 points.
Ingredients:
2 cups chicken broth, divided
1/4 cup seasoned flour {flour mixed with a dash of salt and peper)
16 ounces boneless skinless chicken breast, divided in four
16 ounces stewed red ripe tomatoes
3 medium chopped scallions
Instructions:
1. Pour 1/2 cup broth into wide bowl; place flour mixture on plate. Dip each chicken breast in broth, then flour turning to coat all sides.
2. Spray 12 inch nonstick skillet with cooking spray, cook chicken over medium heat, turning once, until browned on both sides. Remove chicken from skillet; set aside.
3. Add any remaining flour to skillet, cook, stirring constantly, until browned. Slowly stir in 1/4 cup broth; cook until thickened. Gradually stir in remaining broth; cook, stirring constantly, until slightly thickened.
4. Add tomatoes and onions to skillet; bring to a boil. Reduce heat to low; return chicken to skillet and simmer until cooked through, about 10 minutes.
