Oven Fried Coconut Shrimp

Notes:  I love Coconut Shrimp - this is a decent alternative for the waistline!

Ingredients:

1 tablespoon lime juice
14 ounces light coconut milk
2 pounds chicken
3/4 cup bread crumbs
1/2 cup sweetened coconut flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Instructions:

1. Combine milk and juice, marinate chicken for 1.5 hours.  Heat oven to 400 degrees.

2. Combine bread crumbs, coconut, salt and pepper.  Dredge Chicken.  Place chicken on sheet pan.

3. Bake for 30 minutes, flip and bake another 30 minutes.
