Marinated Flank Steak

Notes: This is a South Beach recipe

Ingredients:

1 pound flank steak
1/4 cup reduced-sodium soy sauce
2 teaspoons honey
2 teaspoons grated peeled ginger (or 1 teaspoon ground/dry)
2 teaspoons grated lemon zest
2 garlic cloves, minced
1 tablespoon dry sherry
Pinch crushed red pepper flakes

Instructions:


  1. Combine all ingredients except flank steak in zip-top bag
  2. Add steak to marinade and seal bag
  3. Turn bag to coat steak and refrigerate overnight (up to 24 hours)
  4. Remove meat from refrigerator at least 30 minutes before cooking
  5. Discard marinade and pat steak dry
  6. Rub with olive oil (2 teaspoons)
  7. Broil 3 inches from heat
  8. Cook 4 minutes each side
  9. Let stand 3 minutes before cutting on diagonal
