Notes: This is a South Beach recipe
Ingredients:
1 pound flank steak
1/4 cup reduced-sodium soy sauce
2 teaspoons honey
2 teaspoons grated peeled ginger (or 1 teaspoon ground/dry)
2 teaspoons grated lemon zest
2 garlic cloves, minced
1 tablespoon dry sherry
Pinch crushed red pepper flakes
Instructions:
- Combine all ingredients except flank steak in zip-top bag
- Add steak to marinade and seal bag
- Turn bag to coat steak and refrigerate overnight (up to 24 hours)
- Remove meat from refrigerator at least 30 minutes before cooking
- Discard marinade and pat steak dry
- Rub with olive oil (2 teaspoons)
- Broil 3 inches from heat
- Cook 4 minutes each side
- Let stand 3 minutes before cutting on diagonal
