Notes: This is a Weight Watchers recipe
Ingredients:
1/2 cup flour
2 eggs, beaten
4 chicken breast halves
1/4 cup parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, chopped
3 tablespoons minced basil
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions:
- Preheat oven to 375 degrees
- Dip chicken in flour, then in eggs
- Place in greased baking dish
- Combine cheese, bread crumbs, and butter
- Sprinkle over chicken
- Loosely cover dish and bake 20 minutes
- Uncover and bake 5-10 minutes longer to brown
- Combine tomatoes, olive oil, basil, salt, and pepper
- Spoon over baked chicken and serve
