Bruschetta Chicken

Notes:  This is a Weight Watchers recipe

Ingredients:

1/2 cup flour
2 eggs, beaten
4 chicken breast halves
1/4 cup parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, chopped
3 tablespoons minced basil
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions:


  1. Preheat oven to 375 degrees
  2. Dip chicken in flour, then in eggs
  3. Place in greased baking dish
  4. Combine cheese, bread crumbs, and butter
  5. Sprinkle over chicken 
  6. Loosely cover dish and bake 20 minutes
  7. Uncover and bake 5-10 minutes longer to brown
  8. Combine tomatoes, olive oil, basil, salt, and pepper
  9. Spoon over baked chicken and serve
