Ingredients:

5 tablespoons pickling salt
12 cups zucchini
4 cups onions
2 cups green peppers
Syrup
1 1/2 cups white vinegar
4 cups sugar
1 teaspoon nutmeg
1 teaspoon turmeric
2 teaspoons cornstarch
1/2 teaspoon black pepper
1 teaspoon mustard seed
2 teaspoons celery seed

- Add 5 T pickling salt and let stand overnight.
- Rinse in cold water (small amounts.) Drain until dry.
- Add to syrup when syrup boils.
- Add Zucchini, mix and cook down until sort of thick. 15 - 20 minutes.
- Pack into prepared jars and process 10 minutes.
