Zucchini Relish


Ingredients:

Vegetables
 5 tablespoons  pickling salt
 12 cups  zucchini
 4  cups  onions
 2  cups  green peppers

Syrup
1 1/2 cups white vinegar
4 cups sugar
1 teaspoon nutmeg
1 teaspoon turmeric 
2 teaspoons cornstarch
1/2 teaspoon black pepper
1 teaspoon mustard seed
2 teaspoons celery seed


Instructions:
  1. Add 5 T pickling salt and let stand overnight.
  2. Rinse in cold water (small amounts.)  Drain until dry.
  3. Add to syrup when syrup boils.
  4. Add Zucchini, mix and cook down until sort of thick.  15 - 20 minutes.
  5. Pack into prepared jars and process 10 minutes.
