Notes: Try using Monterey Jack Cheese with Jalapeno Peppers or Cheddar Cheese
Ingredients:
3 cups hash browns, frozen, shredded
3/4 cup monterey jack cheese, shredded
1 cup canadian bacon, diced
1/4 cup green onion, sliced
4 each eggs, beaten
12 ounces evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt
Instructions:
1. Spray 2-quart sqare dish.
2. Arrange potatoes and sprinkle with cheese, canadian bacon, and onions.
3. In a bowl combine egg, milk, pepper, and salt. Pourt over potatoes.
4. Bake uncovered at 350 degrees for 40 - 45 minutes until the center is set.
5. Let stand 5 minutes before serving.
