Carrot Souffle

Servings:  8 - 10

Note:  Bake 1/2 recipe for 40 minutes

Ingredients:
2 pounds carrots sliced
1 cup melted butter
6 eggs
1 cup sugar
2 teaspoons vanilla
6 tablespoons flour
2 teaspoons baking powder

Instructions:

  1. Cook carrots until tender and drain.
  2. Blend carrots and melted butter in blender.
  3. Add all other ingredients and mix well.
  4. Bake in a 2 quart dish at 350 degrees F for about 1 hour.
  5. Stir part way through time.
