Carrot Banana Bread

Notes: Freezes well.


Ingredients:
1/2 cup butter
1 cup brown sugar
2 each eggs
1 cup mashed bananas, 3 medium bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup carrot, grated
1/2 cup chopped nuts, optional

Instructions:

1. Cream butter and brown sugar.  Beat in eggs.  Mash the bananas.

2. Mash the bananas.

3. Mix flour, soda, powder, cinnamon, and solt.  Bled in flour mixture with banans.  Combine with egg-butter-sugar mixture and stir in carrots and nutes.

4. Grease 1 large loaf pan or 2 small ones.  Bake 50 - 60 minutes at 350 degrees.

5. Cool 10 minutes and take out of pan.
