Notes: If you double the recipe cook longer. You can half this recipe also.
Ingredients:
2 whole boneless skinless chicken breast, or 6 tenders
2 medium potato, peeled and halved
1 medium sweet potato, quartered
1 small onion, chopped
2 medium carrots, peeled
Instructions:
1. Put in an ungreased covered baking dish for 1 1/4 hours until the sweet potato carmelizes.
2. This is easy aromatic, nutritious, and oh so delicious! We have it every week. We add a bit of salt and pepper and a few dabs of butter when serving.
