Ingredients:
1 package lentils, soaked and drained
1/2 large red onion, diced and blanched
1 large fennel bulb, chopped
2 cups carrots, chopped
Dressing
1/2 cup olive oil
1/3 cup rice wine vinegar
1/4 cup lemon juice
Instructions:
1. Purchase lentils from trader joes in the refrigerated section.
2. Dice onion and blanch it in boiling water (use the steamer to pull the onion out of the pot easily)
3. Chop the fennel ball and carrots. Mix the ingredients together.
4. Pepare the dressing by wisking the ingredients together. Pour over the lentil mixture and chill.
5. Optionally you can add goat cheese to this mixture. It makes it incredibly rich, smooth, and tangy!
