This recipe is a modification on my friend Adina's Kale Salad. She has lots of great vegetarian recipes.
Ingredients:
Dressing
4 tablespoons balsamic vinegar, Use white balsamic vinegar
4 tablespoons rice wine vinegar
2 tablespoons honey
2 tablespoons extra virgin olive oil
2 teaspoons kosher salt
Salad
10 ounces kale, deribbed and chopped crossways
3/4 cup sunflower seeds
1/2 cup pumpkin seeds, roasted
3/4 cup golden raisins
1/4 cup parmesean cheese, thin shavings
Instructions:
1. Mix well the ingredients for the salad in a large bowl.
2. Prepare Dressing and pour over the salad and toss until all of the salad is coated.
3. Let the salad sit for at least thirty minutes to "mairnate" and then dig in!
** optional: Add crumbled goat cheese when serving
