This is one of Paul's favorite chilies. He would take it on weekend camping trips with the kids when they were a part of the Indian Princess/Guides program.
Ingredients:
2 large onion, finely chopped
10 cloves garlic, finely chopped
3 pounds extra lean ground beef
2 pounds pork loin chops, cut in 1/4" cubes
6 ounces tomato puree
24 ounces beer
8 teaspoons chili powder
3 tablespoons cumin
1 tablespoon oregano
2 tablespoons paprika
1 tablespoon chili pepper, flaked
2 tablespoons salt
1 tablespoon sugar
1 tablespoon mace
1/4 cup hot sauce, Red Hot
Instructions:
- Saute onion, garlic, and meats in large pan.
- Add remaining ingredients and cook on medium to low stove until all the flavors have melded.
