Big Martha's Meatloaf

Servings: 8

Ingredients:

1 medium onion
1 clove garlic
2 stalks celery, cut in 1" pieces
2 medium carrots, quartered
1/2 cup fresh parsley

4 slices white bread, crumbled
2 1/2 pounds ground round, or other good cut
1 large egg
1/2 cup ketchup
2 teaspoons dry mustard
2 teaspoons salt
pepper

Topping, to taste
2 T brown sugar
1/2 c ketchup
1 t dry mustard

Instructions:

1. Blend in food processor the onion, garlic, celery, carrots, and parsley.  Then pour into a bowl.

2. Add bread, ground round, egg, ketchup, mustard, salt, and pepper.

3. Mix with hands until well mixed.  Put in a very large bread pan or two smaller ones. (I freeze one for a later time.)

4. Prepare the topping and place on the meat mixture.

5. Cook 90 minutes at 375 or less if you have smaller pans.  Check after an hour and top with foil if the top is too brown.
