Lemony Mediterranean Quinoa Salad

Notes:  This recipe is from the back of the Simple Truth Quinoa Package

Servings: 8 


Ingredients:


2 cups chicken broth 1 garlic clove, smashed 1 cup uncooked quinoa 2 large chicken breasts, cooked, cubed 1 small red onion 1 pepper (any color) 1/2 cup kalamata olives, chopped 1/2 cup crumbled feta cheese 1/4 cup parsley, chopped 1/4 cup chives, chopped 1/2 cup lemon juice (or more) 1/4 cup olive oil (or less) salt and pepper to taste


Instructions:



  1. Bring 2 cups of chicken broth to a boil with the smashed garlic.
  2. Add uncooked quinoa and cover at medium low heat for 15 to 20 minutes or until the quinoa is cooked and has absorbed the liquid.
  3. Transfer the quinoa to a glass bowl and remove the smashed garlic.
  4. Add the remaining ingredients carefully folding in each item.

  1. Chill & Serve
