Ingredients:
2 cups chicken broth 1 garlic clove, smashed 1 cup uncooked quinoa 2 large chicken breasts, cooked, cubed 1 small red onion 1 pepper (any color) 1/2 cup kalamata olives, chopped 1/2 cup crumbled feta cheese 1/4 cup parsley, chopped 1/4 cup chives, chopped 1/2 cup lemon juice (or more) 1/4 cup olive oil (or less) salt and pepper to taste
Instructions:
- Bring 2 cups of chicken broth to a boil with the smashed garlic.
- Add uncooked quinoa and cover at medium low heat for 15 to 20 minutes or until the quinoa is cooked and has absorbed the liquid.
- Transfer the quinoa to a glass bowl and remove the smashed garlic.
- Add the remaining ingredients carefully folding in each item.
- Chill & Serve
