Servings: 4-6
Notes: These make a delicious mid-afternoon snack or a great offering for the holidays.
Ingredients:
1/4 cup + 2 tablespoons liquid honey
1/2 teaspoon ground cinnamon
pinch of salt
2.5 cups of mixed nuts (cashews, pecans, almonds, peanuts, walnuts) (chop them so they are approximately the same size)
Instructions:
Line a rimmed baking sheet with parchment paper (greased) or use a silpat.
In a bowl, microwave the honey for 30 seconds or until warm and liquefied.
Stir in the cinnamon into the honey and pour over the nuts. Stir in order to coat all of the nuts. Spread on a the prepared baking sheet and sprinkle the top with the pinch of salt.
Bake at 350 degrees for 10 minutes. Stir and flip over the nuts. Be extremely careful, the nuts are very hot. Then bake for 5 more minutes. Promptly remove from the oven and let cool.
After the nuts have thoroughly cooled, break them apart and store in an airtight container.
