Crockpot Enchilada Casserole

Ingredients:
14-1/2 ounce can tomatoes
1 small chopped onion
1 clove garlic, minced
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
6 ounce can tomato paste
1 pound ground meet (turkey or beef), browned
1 package dry taco seasoning mix
2 cups shredded cheddar cheese
9-12 corn torillas

Instructions:
1.  Blend tomatoes with onion and garlic in a blender and pour into a medium saucepan.
2.  Add pepper, salt, and tomato paste.  Heat until boiling, then simmer 5 to 10 minutes.
3.  Brown turkey or beef with taco seasoning mix.
4.  Place 3 tortillas in bottom of crockpot.  Layer over with 1/3 ground meat, 1/3 sauce,.and 1/3 cheese.
5.  Follow with 3 more tortillas and repeat the layers two more times ending with cheese.
6.  Cover and cook on low for 6-8 hours.
