Curried Rice with Shrimp

Servings: 2-4

Notes:  This recipe is modified from a Real Simple online recipe. .  This makes the house smell wonderfully.

Ingredients:
1 tablespoon olive oil
1 large onion, chopped
2 carrots, chopped
1 can garbanzo beans, drained and rinsed
2 cloves garlic, chopped
2 teaspoons curry powder
1 bag of Trader Joe's brown rice prepared
Kosher salt to taste
Black pepper to taste
1.5 pounds peeled and deveined large shrimp
1/2 cup fresh basil, chopped

Instructions:
  1. Prepare the Trader Joe's brown rice in the microwave.
  2. Heat the oil in a large skillet over medium heat.  Add the onion, carrots, and garbanzo beans and cook, stirring occasionally, until carrots and onions are soft (6-8 minutes)
  3. Add the garlic and curry powder and cook , stirring, until fragrent, (around 2 minutes)
  4. Add the rice, 1/2 teaspoon each salt and pepper, and bring to a boil.  Reduce heat and simmer, covered, for 15 minutes.
  5. Season the shrimp with salt and pepper.  Nestle the shrimp in the rice.  Cover and cook until the shrimp are opaque throughout (4-5 minutes).  Fold in the basil.  Adjust the salt and pepper to taste.
