Notes: This recipe is modified from a Real Simple online recipe. . This makes the house smell wonderfully.
Ingredients:
1 tablespoon olive oil
1 large onion, chopped
2 carrots, chopped
1 can garbanzo beans, drained and rinsed
2 cloves garlic, chopped
2 teaspoons curry powder
1 bag of Trader Joe's brown rice prepared
Kosher salt to taste
Black pepper to taste
1.5 pounds peeled and deveined large shrimp
1/2 cup fresh basil, chopped
Instructions:
- Prepare the Trader Joe's brown rice in the microwave.
- Heat the oil in a large skillet over medium heat. Add the onion, carrots, and garbanzo beans and cook, stirring occasionally, until carrots and onions are soft (6-8 minutes)
- Add the garlic and curry powder and cook , stirring, until fragrent, (around 2 minutes)
- Add the rice, 1/2 teaspoon each salt and pepper, and bring to a boil. Reduce heat and simmer, covered, for 15 minutes.
- Season the shrimp with salt and pepper. Nestle the shrimp in the rice. Cover and cook until the shrimp are opaque throughout (4-5 minutes). Fold in the basil. Adjust the salt and pepper to taste.
