Spinach Phyllo Triangles


Notes:  This is my mom's recipe.  It is one of my all-time favorites and a real crowd pleaser!


Ingredients:
2 packages frozen spinach, drained
2 tablespoons parsley, chopped
3/4 pound feta cheese, crumbled
2 packages ricotta cheese
2 large eggs
1 package phyllo dough
4 sticks unsalted butter

Instructions:

  1. Take the phyllo out of the freezer to thaw thoroughly.
  2. Prepare the spinach mixture by combining the drained spinach, parsley, feta,  ricotta cheese, and eggs. (I think mom uses chopped onion too).  
  3. Melt the 4 stick of butter one at a time as needed.
  4. Lay out the thawed phyllo dough on a large clean surface and cut into long 3-4 inch strips.
  5. Brush a "healthy dose" of butter over the phyllo dough.
  6. Add a teaspoon of the mixture to the top of the strip and fold over and over again in a triangle fashion.
