Munising Tried and True Daffodil Cake

Notes: Recipe from 1930

Ingredients:

1 cup egg white
1/2 teaspoon salt
1 cup sugar
1 teaspoon cream of tartar
1/2 teaspoon vanilla
1/2 teaspoon orange extract
4 whole egg yolks
3/8 cup Swans Down to the white part flour, sifted before measured
1/2 cup Swans Down to the yellow part flour, sifted before measured

Instructions:

1. Make sure to sift the flour before measuring.

2. Add salt to egg white and beat until foamy.

3. Add cream of tartar and continue beating until stiff.

4. Fold in sugar and carefully divide the mixture into two equal parts.

5. To one part fold in 3/8 cup flour sifted 5 times.   Add 1/2 teaspoon vanilla.

6. To the other part, fold in beaten egg yolks and 1/2 cup flour sifted 5 times.  Add 1/2 teaspoon orange extract.

7. Put, by spoonfuls, in an ungreased angel food cake pan, alternately yellow and white as marble cake.

8. Bake 60 minutes in slow over at 325 - 350 degrees.

9. Invert pan and let stand 40 minutes before removing.
