Ingredients:
1/2 cup sugar
1/2 cup powdered sugar
1/2 cup butter, softened
1/2 cup oil, light
1 whole egg
2 cups flour, plus 2 tablespoons
1/2 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt
sugar, plus 1/4 to 1/2 cup
Instructions:
1. Preheat oven to 375 degrees.
2. Beat together the two sugars, butter and oil until creamy. Beat in egg.
3. Combine flour, baking soda, cream of tartar, and salt with a whisk. Thoroughly blend into sugar and butter mixture.
4. Place ¼ - ½ cup sugar in a small bowl. Shape dough into 1 inch balls and roll in sugar to coat. Using a small flat bottomed glass, flatten each ball to about ¼ inch thickness on ungreased baking sheets.
5. Bake til edges are lightly browned, about 10 - 12 minutes. Yum!
