Notes: I really like this recipe and make each year for my Christmas party. I make the recipe 4x and freeze the balls. Then I warm them in the oven for the party. I make enough to have for the next couple of months and just pop them in the toaster oven to warm and have they are a great snack!!
Ingredients:
4 large eggs
2 (10 oz) packages of frozen spinach, chopped, drained and squeezed dry
1 cup onion, minced
3/4 cups Parmesan cheese, grated
3/4 cup butter softened
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1/2 teaspoon garlic powder
2 1/2 cups crumb-type herb seasoned stuffing mix (I use Pepperidge Farm)
Instructions:
- Beat eggs in large bowl. Stir in remaining ingredients except for stuffing mix. When well blended, stir in stuffing mix and let stand 20 minutes while mixture firms. Put in refrigerator.
- Shape into walnut-sized balls and arrange on an ungreased baking sheet. I like to use parchment paper
- Bake at 350 degrees for 20 minutes until lightly browned.
- May be cooked, wrapped and frozen. Reheat frozen on baking sheet for 10 to 15 minutes in a 350 degree oven.
