Lemon Filling


Notes:  Don't use the white part of the lemon rind - it is bitter.
Pair this with the Fluffy Frosting Recipe

Ingredients:

1/4 cup cornstarch
1/4 teaspoon salt
2/3 cup sugar

1 cup water
1 whole egg yolk

3 tablespoons lemon juice
1 tablespoon lemon rind

Fluffy Frosting to go with the Lemon Filling

Instructions:

1. Blend together cornstarch, salt, and sugar.

2. Add water  and mix well. Cook over direct heat until thick, stirring constantly.

3. Beat egg yolk slightly and add a little of the hot mixture from the saucepan.  Then add the yolk mixture to the saucepan.

4. Cook over low heat about 2 minutes stirring constantly.  Remove from heat.

5. Add lemon juice, lemon rind and cool.
