Cardamom Quick Rusks

Notes:  This recipe was written by Wally Eggan


Ingredients:
1 cup margarine
1 1/2 cups sugar
2 whole eggs
1/2 teaspoon salt
3 teaspoons baking powder, rounded
1 teaspoon ground cardamom
4 1/2 cups flour
1 cup milk

Instructions:

1. Cream margarine and add sugar.  Then add eggs.  Mix salt and baking powder with cardamom and flour.  Add dry ingredients to first mixture alternateing with milk.  Stir well.

2. Place mixture in well greased 9x13 pan.  Sprinkle sugar on top.  Bake at 350 degrees for 30 - 35 minutes.  Remove from oven let sit awhile and cut into narrow strips.  (4 across and 10 or 20 down).

3. Place pieces on cookie sheet and return to oven and bake 45 minutes at 250 degrees.  Turn pieces and brown 15 minutes longer.
