Chicken Cacciatore


Servings: 6

Ingredients:
3 pounds chicken breast

1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1/3 cup vegetable oil
1 medium onion, chopped
1 clove garlic, minced (1 to 2)
1/2 cup fresh mushroom, sliced
1 can tomatoes (16 oz.)
1 can tomato sauce (8 oz.)
1 1/2 teaspoons curry powder
1 1/2 teaspoons thyme
1 tablespoon chopped parsley

Instructions:
1. Coat chicken with a mixture of the flour, salt and pepper.  Brown chicken in oil.

2. Add onion, garlic and mushrooms then sauté.  Add remaining ingredients.  Heat to boiling, then lower heat to simmer.

3. Cover and simmer slowly for 45 minutes.  Serve over pasta of your choice.  Delicious!
